Generally, take chords and shapes you know and add open strings to them and see what sounds nice.
Moving the same shape up and down the fretboard
Start with a familiar chord, e.g. a barre chord, and then take away some fingers to find interesting chords. Then move that shape up and down the fretboard and see what sounds good.

Variations of existing chords
Take an existing simple chord and move one finger around to see what works.

A major 7 chord variations

Shoegaze-y powerchords
Add open strings to them

Alter the power chord
E.g. Change the E power chord. Nice to switch between them for good chord progression.

Add open strings
Start with Amaj7

And add the open top two strings for a more sustained sound.

With open A string it sounds even more sustained.

Start with Emaj7
